Mustard seed oil has the Lowest Saturated Fat content amongst edible oils. Higher amounts of these fats form deposits in the arteries, causing many heart problems. Secondly, while other edible oils lack either of the two essential fatty acids, rapeseed-mustard provides both essential fatty acids to the human body – oleic acid and Linolenic acid.
